Fish Fingers

Fish fingers are a family staple, these are quick an easy for busy families. Salmon is a great source of Omega 3, an important nutrient for baby development. For those following a vegan or a plant-based diet consider trial tofu fingers instead.

Fish Fingers Recipe

Servings: 4 (10 fish fingers)

Ingredients

  • 2 fillets or 260g of skinless and boneless salmon fillets, cut into approx. 3 x 7 cm long strips
  • 1 ½ cup panko breadcrumbs or homemade breadcrumbs
  • 2 tbsp Little Supper Club Fish Finger Seasoning
  • 4 tbsp preferred oil
  • 1 tsp Dijon mustard
  • ½ tbsp honey
  • ½ cup natural yoghurt or plant alternative
  • ½ small lemon (juiced)
  • ½ tsp salt (optional 12m+)

Instructions

  • Preheat the oven to 180c/gas mark 6 and lightly grease an oven tray. You’ll need this soon.
  • In a bowl, combine breadcrumbs, Little Supper Club Fish Finger Seasoning, mustard, oil and honey. If using, add salt.
  • In a seperate bowl, add the yoghurt and lemon juice – mix.
  • Dip each fish strip into the yoghurt mixture & then evenly coat in the breadcrumbs, pressing down firmly onto the fish.
  • Cook for 15-20 mins or until cooked through and lightly golden.
