1-Pot Chicken and Rice

A tasty 1-Pot dish that's a favourite all round, and less washing up too!

Stock cubes are a common concern and rightly so because of their high salt content, opt for no or low salt versions instead. For  <1 years no more than 1g of salt a day and 1-3 years no more than 2g a day.

1-Pot Chicken and Rice Recipe

Ingredients

  • 3 tbsp preferred oil (plus a drizzle more for Step 2)
  • 6 chicken thighs or drumsticks
  • ½ red pepper (diced finely)
  • 2 cups of long grain rice (washed and drained)
  • 3 ½ cups no or low salt chicken stock (if your little is still building confidence with their first solids, you may choose to add extra water to make the rice softer)
  • 1/2 lemon (juiced)
  • Knob of butter
  • 3 tbsp 1-pot Little Supper Club 1-Pot Chicken & Rice Seasoning

Instructions

  • Throw chicken in a bowl, add oil and half of the 1-pot Chicken and Rice Seasoning. Mix well. You’ll need the other half soon.
  • Add oil to a large pot/pan on medium heat then add chicken and cook for 5-6 mins on each side or until cooked through. Set aside.
  • In the same pan add rice, butter, red pepper, chicken stock, lemon and the rest of the 1-Pot Chicken and Rice Seasoning. Mix well and bring to a boil.
  • Turn heat down to a low simmer and lay chicken on top of the rice without overlapping. Stick the lid on and cook for 20 mins or until the rice has absorbed the stock and is cooked through.

Notes

If your little is 12+ months, you might want to throw in a handful of frozen peas and frozen sweetcorn at the same time as the rice.
